Manzo, the Italian word for beef is a salami we make from Wagyu beef, including the casing produced from beef collagen. The rich Wagyu meat is enhanced with thyme, black pepper, and Cabernet wine. Tempesta created Salami di Manzo to bring the authentic flavors of Western European salami to those who prefer not to eat pork, still it remains one of our most popular salamis, bringing unique variety to any charcuterie board.
